As I prepared for our family’s Small Bites Thanksgiving gathering this year, I thought about all of God’s blessings in my life. Thanksgiving is a reminder to all of us to be grateful-God is good. And remember, be thankful not just for the big things, but also for the little things. Let these small bites remind us of God’s goodness in every season, every memory, and every person in our lives.

When I began planning this year, I really wanted everyone to be able to move around a bit, visit with each other. Normally, when we have our holiday celebrations, the living room and dining room are wall-to-wall tables and chairs. you kind of get stuck in your seat. The grandkids definitely don’t want that. And because most of these bites could be made ahead of time, I had the free time to visit with everyone too.

God is faithful in every season, even in the smallest details. I am grateful for his faithfulness, his love, and his providing for all of our needs. And I am thankful for the opportunity to gather our family together to celebrate Thanksgiving.

I love small bites and enjoy trying new ideas. This was a fun experiment. It was a chance for everyone to taste the traditions of Thanksgiving, but in a different way.

⭐ The Slow-Roasted Turkey & Gravy Sliders

Tender, juicy, and delicious-the turkey breast is slow-roasted at 300 degrees for a rotisserie effect.

⭐ Mashed Potato Cups

You can’t have Thanksgiving without mashed potatoes! These mini-cups are easy to make, soft and creamy. best with a drizzle of gravy.

⭐ Mac and Cheese Bites

These bites taste just like their regular-sized version. Cheesy and delicious.

⭐ Blue Cheese Stuffed Bacon-Wrapped Stuffed Dates

Sweet and savory, these dates are a big hit.

⭐ Corn Pudding Squares

These corn pudding squares are very similar to corn pudding, just made into finger food. Using fresh corn makes them super tasty.

⭐ Deviled Eggs Two Ways

For something a little different, we had beautiful pink deviled eggs, white halves marinated in pickled beet juice, and soy sauce marinated whites. Both are filled with the traditional deviled egg yolk mixture.

⭐ Honey and Thyme Baby Carrots

Cooked to just tender, not soft and then glazed with honey and fresh thyme.

⭐ Maple Syrup-Drizzled Sweet Potato Bites

Just a little bit of maple syrup brings out the sweet goodness of the sweet potato.

⭐ Rosemary and Citrus Marinated Olives

This is a really tasty way to serve olives. The combination of fresh orange slices, lemon slices, and rosemary sprigs is very refreshing.

⭐ Honey and Olive Oil Cheddar Cheese

The honey and olive oil transforms a humble block of cheddar into a very tasty cheese bite-no crackers needed.

⭐ Stuffing Bites

Perfect bite with a little gravy. Even better, add this to your slider with a little extra gray on top. Don’t forget the cranberry jelly!

⭐ Sweet and Spicy Roasted Nuts

The title describes these perfectly. Easy to roast on a cookie sheet with sugar, cinnamon and other spices both savory and spicy. Warning- these are really addictive!!

⭐ Cheesy Spinach Squares

Of course we need some greens. These spinach squares are delicious. Another easy recipe.

⭐ Apple Turkey with Peanut Butter Dip

A delicious plate of sliced apples plated as a turkey and served with a light peanut butter and yogurt dip. Kids love it!

⭐ A Trio Of Cupcakes

Aunt Kate’s Carrot Cupcakes with Cream Cheese Frosting, Tiramisu Cupcakes, and Pumpkin Pie Cupcakes complete our small bites meal. Yum!

To celebrate the 4th of July, I wanted to make a savory red, white, and blue pizza. We always have the strawberries, blueberries, and whipped cream flag. I wanted to try something different. And here is the basic recipe for Blueberry Pesto: 1 pint blueberries

Whenever mom made her potato salad for a party or family dinner, it always disappeared-no matter how much she made. We all love it and I think you will too! You can vary the amount of celery and onion based on your preference. The splash 

Stuffed Burgers

Stuffed Burgers

This is a beautiful burger, worth the work!

Whether you are grilling for a couple of people or for a bunch, this recipe works because you can prepare the burgers ahead of time and you skip melting the cheese on top at the end. After they are cooked, you can pile them all up on a serving platter without worrying about the cheese sticking together.

And I must say, these burgers are delicious even the next day cold- in a sandwich with a little mayo. So, make extra for an easy weekday meal.


Stuffed Burgers

Cheese, onion, and pickle stuffed burgers
Prep Time 1 hour
Cook Time 10 minutes
Total Time 1 hour 10 minutes

Ingredients
  

Burger Butter

  • 4 tbsp butter softened
  • 1/4 cup chopped onion
  • 1/4 cup chopped dill pickle
  • 4 tbsp ketchup
  • 1 tbsp yellow mustard
  • 1 tbsp mayonnaise
  • 1 tsp worcestershire sauce

Burgers

  • 1 pkg ground beef 1 3/4lb – 2 lbs
  • 4 burger buns
  • sliced tomato
  • iceberg lettuce
  • ketchup

Instructions
 

  • Combine burger butter ingredients and place in freezer up to one day ahead.
  • Divide ground beef into 4 large (4 oz) and 4 smaller (3 oz) ball. Flatten the 4 oz balls with your hands as thin as you can.
  • Place 2 tbsp of frozen burger butter in center. top with 1 slice of cheese, broken into 4 pieces.

  • Flatten smaller balls so to they are big enough to cover the cheese. Place on top of cheese, pressing meat down into bottom patty. Pick up patty and shape with your hands, sealing edges.
  • Grill burgers 5 minutes on one side, flip and grill additional 3-5 minutes.
    Toast burger buns.
    Slice tomato and plate with lettuce.
  • Assemble your burgers and serve, maybe a little ketchup on top.
    And maybe some fries on the side.

Notes

I have made these as sliders. Still a hearty sandwich, just a bit smaller. Larger patties at 2 oz. and smaller ones at 1 oz. 1 lb makes 5.

Grilled burgers remind me of summer, and summer, of course, reminds me of the beach.

I love the beach and I love finding treasures there. I found this starfish and I thought I’d share the “story of the starfish.”

An old man walked up a shore littered with thousands of starfish, beached and dying after a storm. We can make a difference every day too. And God cares about each one of us and wants to make a difference in our lives too.
