Mom’s Potato Salad
Whenever mom made her potato salad for a party or family dinner, it always disappeared-no matter how much she made. We all love it and I think you will too! You can vary the amount of celery and onion based on your preference. The splash of vinegar and touch of sugar give it just the right sweet tang.
I’ve tried to get it as close to mom’s recipe as possible. She didn’t have it written down. Of course, it always tasted better when she made it. Thanks mom!

Mom’s Potato Salad
Ingredients
- 2.5 lbs russet potatoes
- 1/2 cup chopped celery
- 1/2 cup chopped onion
- 3/4-1 cup mayonnaise
- 1 tbsp apple cider vinegar
- 1 tbsp sugar
- 1/2 tsp black pepper
- 1 tsp salt
Instructions
- Boil whole, unpeeled potatoes in salted water, 3 qts water-2tsps salt.Boil until tender. A cake tester works great to check for doneness, it should easily go through potato.

- Drain potatoes and set aside to cool.

- Chop celery and onion.

- Add mayonnaise, salt, pepper, vinegar, and sugar.

- Stir to combine. Check seasonings and adjust to taste.
- Refrigerate for 1 hour before serving, can be made a day ahead.

The potato was used as a famine relief food in many regions, but the potato also caused the famine in Ireland.
We all face seasons of adversity, times of loss and sorrow, times of testing and struggles. I’m reminded with this simple, comforting potato salad, that love, our memories, our faith can nourish us in new ways. And above all, God works for the good of those who love him.
